Bacon and Cheese Biscuits

I love breakfast...but what I love even more is recipes that I can make once and it will last through the week. Just like the Cheddar Scallion Biscuits I posted not too long ago, these Cheesy Bacon Biscuits, brought to you by, are perfect for anyone that is on the go, running out the door, or giving to the kids while putting them on the school bus after they woke up a half hour late! And as always can be just as perfect as your dinner rolls...

Cheesy Bacon Biscuits
- 2 tablespoons melted butter
- One roll refrigerated biscuit dough OR make your own low fat bisquick biscuits!
- 6 thin slices fresh mozzarella or you can use shredded mozz
- 1 cup Smithfield cooked, crumbled bacon
- 1 cup shredded cheddar cheese 
Preheat oven to 350 degrees F. and brush a 9-inch cast iron skillet with melted butter.

Unroll biscuits from can or spread out homemade dough and place into bottom of skillet. Top with slices of mozzarella cheese, bacon crumbles then shredded cheddar.

Bake for 15 to 20 minutes, until cheese is melted and biscuits are cooked through.
